A nostalgic dessert with a fluffy yellow cake base, creamy pineapple layer, and topped with whipped cream, coconut, and nuts.

  • 1 box yellow cake mix
  • 1 can (20 oz) crushed pineapple, drained
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup shredded coconut
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9×13 inch baking dish.
  2. Prepare the cake batter according to the box instructions and pour into the baking dish. Bake for 25-30 minutes until a toothpick comes out clean.
  3. Mix the instant vanilla pudding mix with 2 cups of cold milk in a bowl until thick and creamy.
  4. Poke holes all over the cooled cake with a fork. Spread the crushed pineapple over the cake, then pour the thick pudding mixture on top.
  5. Whip the heavy cream with the powdered sugar until stiff peaks form and spread over the pudding layer.
  6. Garnish with shredded coconut and optional chopped nuts on top.
  7. Chill the cake in the refrigerator for at least 2 hours before serving.

Notes

Best served with vanilla ice cream or caramel sauce. Store leftovers in the refrigerator for up to 3 days.
