  • 1 lb shrimp, peeled and deveined
  • 1 cup pesto sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese, for serving
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Cook the Pasta: Start by boiling water in a large pot. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside.
  2. Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and listen for that beautiful sizzle.
  3. Cook the Shrimp: Add the shrimp to the skillet, ensuring they lay in a single layer. Sauté for about 2-3 minutes per side until they turn pink and opaque, and season with salt and pepper.
  4. Mix in the Pesto: Remove the skillet from heat and drizzle the pesto sauce over the cooked shrimp. Stir gently to meld the flavors.
  5. Combine Pasta and Sauce: Toss the cooked pasta into the skillet, mixing until well coated with the pesto and shrimp.
  6. Serve and Garnish: Plate your exquisite creation, adding grated Parmesan cheese and fresh basil leaves if desired.

Notes

Do not overcook the shrimp to maintain tenderness. Pair with a green salad and white wine for a complete meal.
