  • 1 cup crushed chocolate graham crackers (or Oreo crumbs)
  • 4 tablespoons unsalted butter, melted
  • Pinch of salt (omit if using Oreo crumbs)
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon peppermint extract
  • 4–5 drops red food coloring
  • 1½ cups heavy cream
  • 1 cup whipped cream
  • Crushed peppermint candies or mini candy canes

Instructions

  1. Make the Crust: In a mixing bowl, combine crushed chocolate graham crackers with melted butter and a pinch of salt. Stir with a fork until the mixture resembles damp soil. Spoon a layer into the bottom of each cup and press lightly to form a base. Set aside.
  2. Beat the Cream Cheese: In a large mixing bowl, beat the softened cream cheese until completely smooth, ensuring there are no visible lumps. This step guarantees a silky mousse texture.
  3. Add Sugar and Flavoring: Add powdered sugar to the cream cheese and beat until fully incorporated. Mix in peppermint extract and red food coloring until the color is evenly distributed throughout the mixture.
  4. Whip the Cream: In a separate bowl, whip the heavy cream until it holds firm peaks. Use cold cream and beat it on medium-high speed to achieve the best results.
  5. Fold in the Whipped Cream: Gently fold the whipped cream into the cream cheese mixture in batches, using a spatula to avoid deflating the mousse. Continue folding until fully combined and fluffy.
  6. Assemble the Cups: Spoon or pipe the mousse mixture over the prepared crust in each cup. Tap each cup gently on the counter to settle the mousse evenly. Cover and refrigerate for at least 3 hours, giving the mousse plenty of time to set and develop flavor.
  7. Add Toppings: Before serving, top each mousse cup with whipped cream and a sprinkle of crushed peppermint candies. For an adorable garnish, add a mini candy cane if desired.
