Delicious and moist peanut butter cupcakes rich with chocolate flavor, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix the all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat together the creamy peanut butter and softened unsalted butter until smooth and creamy.
  4. Add in the two large eggs and the vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk until just combined.
  6. Fill each cupcake liner about 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool in the tin for a few minutes before transferring them to a wire rack.

Notes

For a richer flavor, consider adding chocolate frosting or a dusting of powdered sugar. Store any leftovers in an airtight container for up to 3 days.
