A nostalgic and moist cake featuring caramelized peaches on top, perfect for summer gatherings.

  • 4 cups sliced ripe peaches
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Create the peach base by melting butter and brown sugar together in a skillet over medium heat. Stir until combined, then add sliced peaches and cook until softened.
  3. Pour the peach mixture into a greased round cake pan.
  4. Mix together flour, granulated sugar, baking powder, and salt in one bowl. In another bowl, whisk together eggs, milk, oil, and vanilla. Combine wet and dry ingredients.
  5. Pour the batter over the peaches in the pan.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool for 10 minutes, then invert onto a serving plate.
