A delightful Peach Upside Down Cake with caramelized peaches atop a light and fluffy cake, perfect for summer gatherings.

  • 4 cups peaches, sliced
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a round cake pan over low heat, then sprinkle the brown sugar evenly over the melted butter.
  3. Arrange the sliced peaches on top of the brown sugar mixture.
  4. Prepare the cake batter by mixing the flour, granulated sugar, baking powder, salt, eggs, milk, and vanilla extract until smooth.
  5. Pour the batter over the arranged peaches, covering them completely.
  6. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Invert the cake onto a plate and let it cool for a few minutes.

Notes

Use slightly overripe peaches for maximum sweetness. This cake can also be made ahead of time and stored properly to retain moisture.
