Delightful peach hand pies with a flaky crust and sweet peach filling that evoke summer nostalgia.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 2 cups fresh peaches, peeled and diced
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)

Instructions

  1. Mix the Dough Ingredients: In a large bowl, combine flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in cold water gradually until the dough forms.
  2. Chill the Dough: Divide the dough into two portions, wrap in plastic wrap, and refrigerate for at least 60 minutes.
  3. Prepare Your Oven: Preheat your oven to 400°F (200°C).
  4. Combine Filling Ingredients: In another bowl, mix peaches, brown sugar, cornstarch, and vanilla until well combined.
  5. Roll Out Dough: Roll out the pie dough on a floured surface to about 1/8 inch thick. Cut out circles using a cookie cutter.
  6. Fill the Hand Pies: Place a spoonful of the peach mixture on half of each circle. Fold over and seal edges with a fork.
  7. Apply Egg Wash: Brush with egg wash and place on a baking sheet.
  8. Bake to Perfection: Bake for 20-25 minutes or until golden brown. Let cool before serving.

Notes

These hand pies can be paired with vanilla ice cream or whipped cream. They can be stored at room temperature for 2 days or in the fridge for up to a week.
