A simple yet impressive rustic dessert featuring tender, syrupy peaches encased in a flaky pie crust, perfect for summer gatherings.

Ingredients

  • 4 ripe peaches, sliced
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pre-made pie crust
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon flour (for dusting)
  • Pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C) so it’s nice and hot when you’re ready to bake your peach galette.
  2. Combine the sliced peaches with sugar, vanilla extract, lemon juice, and a pinch of salt in a bowl. Allow them to sit for a few minutes while you prepare the crust.
  3. Roll out the pie crust on a lightly floured surface into a rough circle.
  4. Assemble the fruit mixture in the center of the crust, leaving about a 2-inch border all around.
  5. Fold the edges of the crust over the peaches, tucking and pleating as you go.
  6. Brush the exposed parts of the crust with the beaten egg.
  7. Bake your galette in the preheated oven for 30-35 minutes or until the crust is golden brown and flaky.
  8. Cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in a covered container at room temperature for up to 2 days.
