A delightful rustic tart that showcases fresh peaches, perfect for summer gatherings or quiet evenings at home.

  • 4 ripe peaches, sliced
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pre-made pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon butter
  • A pinch of salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the sliced peaches, sugar, cornstarch, vanilla extract, lemon juice, and a pinch of salt in a bowl.
  3. Roll out the pre-made pie crust onto a baking sheet lined with parchment paper.
  4. Place the peach mixture in the center of the rolled-out crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the peaches to create a rustic border.
  6. Brush the crust with the beaten egg and dot the exposed peaches with small pieces of butter.
  7. Bake for 30-35 minutes until the crust is golden and the peaches are bubbly.
  8. Let the galette cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to 3 days.
