A stunning cheesecake featuring vibrant red and blue swirls atop a creamy white filling, perfect for summer celebrations.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted unsalted butter
  • 1/4 cup granulated sugar
  • 4 (8 oz) packages full-fat cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 cup sour cream, room temperature
  • 1 tablespoon pure vanilla extract
  • 4 large eggs, room temperature
  • Red gel food coloring
  • Blue gel food coloring
  • 3 tablespoons of the main cheesecake batter
  • Extra red and blue gel food coloring

Instructions

  1. Preheat the oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper and wrap the outside tightly with foil.
  2. Combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until wet sand forms. Press into pan and bake for 10 minutes.
  3. Beat the cream cheese on medium speed until smooth, about 2 minutes.
  4. Add the granulated sugar to the cream cheese and mix until smooth.
  5. Incorporate sour cream and vanilla extract until well combined.
  6. Add eggs one at a time, mixing on low speed after each until just combined.
  7. Color a portion of batter red and blue using gel food coloring.
  8. Pour the white batter into the crust and drop colored batter in a spiral pattern.
  9. Create surface swirls using a toothpick to drag lines from the center outward.
  10. Bake in a water bath for 55–70 minutes until set but slightly wobbly.
  11. Cool in the oven with the door cracked for 1 hour, then refrigerate for at least 4–6 hours, preferably overnight.

Notes

Ensure all ingredients are at room temperature for the best consistency. Use a water bath to prevent cracks in the cheesecake.
