Delightful mini pancakes filled with creamy blackberry jam, perfect for a cozy breakfast or brunch.

  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup blackberry jam or blackberry cream
  • 1/4 cup honey for glaze
  • Optional: powdered sugar for dusting

Instructions

  1. Whisk together dry ingredients in a large bowl until well combined.
  2. Mix wet ingredients in a separate bowl until smooth and creamy.
  3. Combine wet and dry ingredients gently, stirring until just combined.
  4. Heat your non-stick skillet over medium heat, then pour about a tablespoon of batter onto it.
  5. Create the filling by adding blackberry cream in the center as bubbles form on the pancake.
  6. Flip the pancake once the edges look set, cooking until golden brown on both sides.
  7. Prepare honey glaze by warming honey over low heat until melted.
  8. Serve pancake bombs warm, drizzled with honey glaze and dusted with powdered sugar.

Notes

Don’t overmix the batter to ensure fluffy pancakes. Adjust skillet temperature to avoid burning.
