Decadent cheesecake bars made with rich cream cheese and crunchy Oreo cookie bits, perfect for any occasion.

  • 24 Oreo cookies, crushed
  • 1/4 cup butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 12 Oreo cookies, coarsely chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix crushed Oreo cookies with melted butter until well combined. Press into the bottom of a greased 9×9-inch baking pan.
  3. Beat cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Fold in the coarsely chopped Oreo cookies.
  6. Pour the cheesecake mixture over the crust and spread evenly.
  7. Bake for 25-30 minutes or until the center is set.
  8. Cool completely at room temperature, then refrigerate for at least 4 hours before cutting into bars.
