Indulgent Oreo Cheesecake Bars with a rich cream cheese filling and crunchy Oreo crust.

  • 1 package of Oreo cookies
  • 1/4 cup of butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • Extra crushed Oreos for topping

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9×9 inch pan.
  2. Crush the Oreo cookies in a food processor until they turn into fine crumbs. Mix the crumbs with melted butter until combined. Press this mixture into the bottom of the prepared pan.
  3. Beat together the softened cream cheese and granulated sugar until smooth and creamy.
  4. Add the eggs, one at a time, beating well after each addition. Mix in vanilla extract and sour cream until fully combined.
  5. Fold in the extra crushed Oreos gently.
  6. Pour the cheesecake mixture over the prepared crust in the pan. Bake for 30-35 minutes, or until the center is set.
  7. Let them cool before refrigerating for at least 3 hours.

Notes

Serve chilled and topped with crushed Oreos. Store leftovers in an airtight container.
