One Pot Taco Spaghetti

A comforting and quick dish that combines the bold flavors of tacos with spaghetti, perfect for a weeknight family meal.

Ingredients

  • 8 oz spaghetti
  • 1 lb ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 can diced tomatoes (with green chilies)
  • 2 cups beef broth (or water)
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup onion (diced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Toppings: sour cream, green onions, cilantro

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the diced onion until translucent.
  3. Brown the ground beef, seasoning with salt and pepper.
  4. Stir in the taco seasoning until the meat is well coated.
  5. Add diced tomatoes, beef broth (or water), corn, and spaghetti; bring to a boil.
  6. Reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally.
  7. Melt in shredded cheese until it becomes creamy.
  8. Serve hot topped with sour cream, green onions, and cilantro.

Notes

For added crunch, serve with tortilla chips or a green salad. Leftovers can be stored for 3-4 days in the fridge or frozen for up to 2 months.
