Ingredients

Scale
  • 4 chicken breasts
  • 1 cup orzo pasta
  • 1 large lemon (juice and slices)
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper.
  2. Add chicken to the skillet and sear until golden brown and cooked through, about 6-7 minutes per side.
  3. Remove chicken from the skillet and set aside, allowing it to rest for a few moments.
  4. In the same skillet, add the minced garlic and cook for 30 seconds until fragrant.
  5. Stir in the orzo and cook for 1-2 minutes.
  6. Add chicken broth and lemon juice, then bring the mixture to a boil.
  7. Reduce heat, cover, and simmer for about 10-12 minutes until the orzo is tender and has absorbed the broth.
  8. Stir in the fresh spinach and crumbled feta cheese.
  9. Slice the chicken and place it on top of the orzo.
  10. Serve warm, garnished with additional lemon slices if desired.
