A hearty and flavorful skillet meal that combines ground beef and zucchini with aromatic spices, perfect for weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper to the skillet and sauté until soft, about 4-5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the ground beef and cook until browned, about 5-7 minutes, draining excess fat if needed.
  5. Next, stir in the sliced zucchini and can of diced tomatoes.
  6. Sprinkle in the Italian seasoning, salt, and pepper to taste.
  7. Cover the skillet and let cook for about 10-15 minutes, or until the zucchini is tender.
  8. Serve hot and enjoy!

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 2 months. Reheat gently before serving.
