A comforting Japanese dish that combines fluffy rice, chicken, and vibrant veggies wrapped in a golden omelet.

Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1/2 cup cooked chicken (shredded)
  • 1/4 cup peas and carrots (frozen or fresh)
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Optional: green onions for garnish

Instructions

  1. Heat and sauté the filling: In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add the cooked rice, shredded chicken, peas, and carrots. Stir-fry for a few minutes until heated through. Add ketchup and soy sauce, mixing well. Season with salt and pepper. Remove from pan and set aside.
  2. Prepare the omelet: In the same pan, add the remaining oil and heat over medium-low. Beat the eggs and pour them into the pan, swirling to cover the bottom. Cook until the edges start to set but the top is still slightly runny.
  3. Assemble the omurice: Spoon the fried rice mixture onto one half of the omelet. Carefully fold the omelet over the rice and slide it onto a plate.
  4. Garnish and serve: Garnish with chopped green onions if desired and serve immediately.

Notes

For an extra flavor kick, try adding a dash of sesame oil when stir-frying the filling. Use a non-stick skillet for cooking the omelet to prevent sticking.
