A moist and luscious zucchini bread that blends sweetness and spice, perfect for any time of day.

Ingredients

  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven and prepare the pan by greasing a 9×5 inch loaf pan.
  2. Combine the wet ingredients: grated zucchini, granulated sugar, vegetable oil, and eggs.
  3. Whisk together the dry ingredients: flour, baking soda, baking powder, ground cinnamon, and salt.
  4. Mix the wet and dry ingredients together gently until just combined.
  5. Add the vanilla extract and nuts, if using.
  6. Pour the batter into the prepared loaf pan and smooth out the top.
  7. Bake in the preheated oven for 60-70 minutes, or until a toothpick comes out clean.
  8. Cool the bread in the pan for 10 minutes before transferring to a wire rack.

Notes

For extra moist bread, press grated zucchini in a towel to remove excess moisture before adding it to the batter. You can substitute half the all-purpose flour with whole wheat flour for a healthier twist.
