Delicious and nostalgic Oatmeal Cream Pies filled with a fluffy marshmallow center.

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together the flour, baking soda, cinnamon, and salt.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Incorporate the egg and vanilla extract.
  5. Combine the dry ingredients with the wet mixture gradually.
  6. Add the rolled oats and mix until fully combined.
  7. Scoop tablespoon-sized portions of dough onto the baking sheets, spacing them apart.
  8. Bake for 10-12 minutes, or until golden brown and centers are set.
  9. Prepare the filling by mixing marshmallow fluff, powdered sugar, and softened butter.
  10. Assemble the pies by spreading the filling between two cookies.
