Delightful cookies that combine the chewy texture of oatmeal with the rich, nutty flavor of pecans, reminiscent of traditional pecan pie.

Ingredients

  • 1 cup oatmeal
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Creaming together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. Combine the oats, all-purpose flour, baking soda, and salt in another bowl.
  5. Fold in the chopped pecans.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes, or until the edges are golden.
  8. Allow to cool on the baking sheets for a few minutes before transferring to wire racks.
