Wholesome oatmeal cookies perfect for breakfast or a quick snack, packed with nutritious ingredients and customizable with your favorite mix-ins.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil or butter
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or dried fruits (optional)
  • 1 egg or flax egg (for vegan option)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the rolled oats, flour, brown sugar, baking soda, cinnamon, and salt.
  3. Mix together the honey (or maple syrup), melted coconut oil (or butter), and egg in another bowl.
  4. Combine the wet and dry ingredients and stir until well mixed.
  5. Using a spoon or cookie scoop, drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for about 10-12 minutes or until golden brown.
  7. Allow the cookies to cool on a wire rack before serving.

Notes

For a vegan option, substitute the egg with a flax egg. Store leftovers in an airtight container for up to a week.
