  • 1/2 cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup crushed pineapple, drained
  • 1/2 cup orange juice
  • 2 tablespoons orange zest

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  2. Whip the cream cheese mixture: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  3. Whip the heavy cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Combine the cheesecake mixtures: Divide the mixture in half. To one half, add the drained crushed pineapple. To the other half, add the orange juice and orange zest.
  5. Assemble the cheesecake: Pour the pineapple mixture over the crust, then pour the orange mixture on top, swirling gently to create a marbled effect.
  6. Chill and set: Cover the cheesecake and refrigerate for at least 4 hours, or until set.
