Delightful no-bake lemon cheesecake bars with a creamy filling atop a buttery graham cracker crust, perfect for any occasion.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • â…“ cup sugar
  • ½ cup butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • ¼ cup lemon juice
  • Zest of 1 lemon
  • 1 tsp vanilla extract

Instructions

  1. Prepare the crust by combining the graham cracker crumbs, sugar, and melted butter. Press this mixture into a greased 9×9 inch square pan.
  2. Cream the softened cream cheese and powdered sugar together until smooth.
  3. Add the heavy cream, lemon juice, lemon zest, and vanilla extract to the bowl. Beat until light and fluffy.
  4. Spread the lemon mixture evenly over the prepared crust.
  5. Chill for at least 4 hours in the refrigerator until firm.
  6. Slice into bars and serve chilled, garnished with lemon zest or fresh berries.
