A rich, creamy no bake cheesecake with a buttery graham cracker crust, perfect for any occasion.

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 16 ounces cream cheese, softened
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • Fresh fruit or pie filling for topping (optional)

Instructions

  1. Create the Crust: In a bowl, combine graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  2. Mix the Filling Ingredients: In a separate bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  3. Whip the Heavy Cream: In another bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
  4. Combine the Mixtures: Gently fold the whipped cream into the cream cheese mixture until fully combined and smooth.
  5. Assemble the Cheesecake: Pour the cream cheese mixture over the crust in the springform pan, smoothing the top with a spatula.
  6. Chill to Perfection: Refrigerate for at least 4 hours or until the cheesecake is set and firm.
  7. Top and Serve: Before serving, top with fresh fruit or pie filling if desired, slice, and enjoy!

Notes

For a lighter version, substitute heavy cream with a non-dairy alternative. Store leftovers in the fridge for up to 5 days.
