A delightful gingerbread loaf that embodies the warmth of spices and the richness of molasses, perfect for cold winter months.

Ingredients

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup (packed) brown sugar
  • ¾ cup (180ml) unsulphured molasses
  • 2 large eggs
  • ½ cup (120ml) whole milk
  • ½ cup (120ml) neutral oil, such as vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
  2. Mix the flour, baking soda, ground ginger, cinnamon, cloves, and salt in a large mixing bowl until combined.
  3. Whisk the eggs and brown sugar in a separate bowl until smooth. Add the molasses, milk, oil, and vanilla extract, and blend until uniform.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Transfer the batter into the prepared loaf pan, smoothing the top.
  6. Bake for 50 to 60 minutes, until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Cool the loaf in the pan for 15 minutes then transfer it to a wire rack to cool completely.
  8. Serve as is or dust with powdered sugar before serving.

Notes

For added flavor, consider using dark brown sugar or incorporating additional spices like nutmeg or cardamom.
