Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1 cup water
  • 1/4 cup granulated sugar
  • Ice cream (various flavors)
  • Cornstarch (for dusting)

Instructions

  1. Combine the sweet rice flour, water, and sugar in a bowl until smooth.
  2. Microwave the mixture for 1 minute, stir, and microwave for an additional minute.
  3. Cool the mochi dough slightly, then dust a clean surface with cornstarch.
  4. Roll the dough onto the cornstarch-dusted surface into a thin layer.
  5. Cut the flattened dough into approximately 3×3 inch squares.
  6. Scoop your favorite ice cream flavor onto the center of each mochi square.
  7. Wrap the mochi over the ice cream and pinch the edges to seal.
  8. Freeze the sealed mochi ice creams on a parchment-lined tray until firm, about 2 hours.
