A delightful mixed berry crisp topped with a crunchy crumble, perfect for summer gatherings.

  • 5 cups mixed berries (fresh or frozen – blueberries, raspberries, blackberries, strawberries)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch (or arrowroot powder)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 3/4 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish. In a large mixing bowl, combine the berries, granulated sugar, cornstarch, lemon juice, lemon zest if using, vanilla extract, and a pinch of salt. Gently stir until the berries are well coated and glossy. Pour the berry mixture into the prepared baking dish and spread it evenly.
  2. In another bowl, whisk together the all-purpose flour, rolled oats, brown sugar, cinnamon, and salt. Add the cold, cubed butter to the bowl. Use a pastry cutter or your fingertips to work the cold butter into the dry ingredients until the mixture resembles coarse crumbs with visible chunks of butter.
  3. Evenly sprinkle the crumble topping over the berry mixture without pressing it down. Transfer your baking dish to the oven and bake for 40 to 45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  4. Once baked, remove the crisp from the oven and allow it to cool for at least 15 minutes. Enjoy it warm on its own or with a scoop of ice cream or whipped cream.
