A warm and luscious slab of Mixed Berry Cobbler, bursting with juicy berries beneath a golden, buttery crust, perfect for any occasion.

  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the mixed berries with 1/4 cup of sugar in a mixing bowl and set aside.
  3. Whisk together the flour, remaining sugar, baking powder, and salt in another bowl.
  4. Add the milk, melted butter, and vanilla extract to the dry ingredients, mixing until smooth.
  5. Pour the batter into a greased baking dish.
  6. Spoon the berry mixture on top of the batter.
  7. Bake in the preheated oven for about 45 minutes, or until golden brown.
  8. Serve warm, optionally with a scoop of your favorite ice cream.
