Delightful mint chocolate chip cookies with a perfect balance of crisp edges and chewy centers, draped in gooey chocolate chips with a refreshing mint flavor.

  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mint chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, brown sugar, vanilla extract, and peppermint extract until smooth.
  3. Beat in the eggs one at a time until well combined.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the mint chocolate chips until evenly distributed.
  7. Drop tablespoon-sized amounts of dough onto ungreased baking sheets.
  8. Bake for 9-11 minutes or until the edges are lightly golden.
  9. Allow cookies to cool for a few minutes before transferring to a wire rack.
