Delightful mini pancake bites filled with molten chocolate, perfect for breakfast or a snack.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 cup chocolate chips or chocolate chunks
  • Cooking spray or butter for greasing

Instructions

  1. Whisk together dry ingredients in a bowl until well combined.
  2. Combine wet ingredients in another bowl, whisking until smooth.
  3. Mix the wet and dry ingredients gently until just combined.
  4. Preheat a mini pancake maker or griddle over medium heat.
  5. Spoon a small amount of batter onto the griddle, add chocolate chips, and cover with more batter.
  6. Cook until golden brown on both sides, about 2-3 minutes each side.
  7. Serve warm with the chocolate center oozing out.

Notes
