Delightful mini cheesecakes with a creamy filling and a crunchy caramelized top, perfect for any occasion.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar (for caramelizing)
  • Graham cracker crumbs (for crust)
  • Salt (a pinch)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Cream the cream cheese and sugar until smooth in a mixing bowl.
  3. Add the vanilla extract and eggs one at a time, mixing well after each addition.
  4. Stir in the heavy cream until fully combined.
  5. Spoon graham cracker crumbs into the bottom of mini cheesecake tins.
  6. Pour the cheesecake batter over the crust, filling each mini tin almost to the rim.
  7. Bake for 20-25 minutes until set.
  8. Allow to cool, then refrigerate for at least two hours.
  9. Sprinkle sugar on top of each cheesecake and caramelize using a kitchen torch or broiler until golden.
