Delicious bite-sized pancakes packed with chocolate goodness, perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Whisk the dry ingredients in a bowl until fully combined.
  2. Mix the wet ingredients in another bowl until smooth.
  3. Pour the wet ingredients into the dry ingredients. Gently combine until just mixed.
  4. Preheat a mini pancake maker or skillet over medium heat.
  5. Pour a small amount of batter into each cavity or onto the skillet.
  6. Sprinkle a few chocolate chips in the center of each pancake, then cover with more batter.
  7. Cook until bubbles form on top, then flip and cook until golden brown.
  8. Serve warm, ideally with powdered sugar on top.

Notes

Don’t overmix your batter for fluffiness. Use a well-greased skillet to prevent sticking.
