Delightful miniature pancakes filled with rich chocolate, perfect for brunch parties or a playful breakfast treat.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Chocolate chips or melted chocolate (for filling)
  • Cooking spray or butter (for frying)

Instructions

  1. Whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Combine buttermilk, egg, and melted butter in another bowl.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick pan over medium heat and lightly grease it.
  5. Pour a small amount of pancake batter onto the pan and place chocolate chips in the center.
  6. Carefully cover the chocolate with more batter.
  7. Cook until bubbles form on top, then flip and cook the other side until golden brown.
  8. Repeat with the remaining batter.
  9. Serve warm and enjoy!

Notes

Serve with maple syrup, fresh berries, or powdered sugar. Store leftovers in an airtight container for up to 3 days.
