Delightful mini loaves packed with the sweetness of ripe bananas and gooey caramel, topped with a creamy condensed milk glaze.

  • 2 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/3 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/2 cup sweetened condensed milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour four mini loaf pans or line them with parchment paper.
  2. Mix the mashed bananas, granulated sugar, brown sugar, and melted butter until well combined.
  3. Add the egg and vanilla extract, stirring until smooth.
  4. Prepare the dry ingredients by whisking together baking soda, salt, and flour.
  5. Combine the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Fold in 1/4 cup of caramel sauce until evenly distributed.
  7. Fill the prepared mini loaf pans, about 2/3 full.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Prepare the glaze by whisking together sweetened condensed milk and remaining caramel sauce.
  10. Cool the loaves for 10 minutes in the pans, then drizzle the glaze over them.
  11. Let the loaves cool completely before slicing.

Notes

Customize by adding nuts or chocolate chips. Use overripe bananas for best flavor.
