A delightful Mediterranean Bowl featuring succulent turkey meatballs, fresh cucumbers, Kalamata olives, and a cool tzatziki drizzle.

Ingredients

  • 1 pound ground turkey
  • ½ cup Italian breadcrumbs or blanched almond flour
  • ¾ cup yellow onion (chopped)
  • 1 large egg
  • 2 teaspoons garlic (minced)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Chopped cucumbers
  • Kalamata olives
  • Tzatziki sauce
  • Fresh dill
  • Lemon wedges or slices
  • Cooked rice or pearl couscous

Instructions

  1. Preheat your oven to 400°F (200°C) to prepare for the meatballs.
  2. Combine the ground turkey, breadcrumbs (or almond flour), chopped onion, minced garlic, egg, kosher salt, and black pepper in a mixing bowl, mixing until well combined.
  3. Shape the mixture into meatballs about the size of golf balls.
  4. Bake the meatballs on a lined baking sheet for about 15 minutes, broiling for an additional 2-3 minutes for extra crispness.
  5. Prepare your rice or couscous according to the package instructions and chop your cucumbers into bite-size pieces.
  6. Assemble a bowl with a base of rice or couscous, topped with turkey meatballs, chopped cucumbers, and Kalamata olives.
  7. Drizzle tzatziki sauce over the top and add fresh dill and a slice of lemon before serving.

Notes

Store leftovers in airtight containers in the fridge for up to three days. Reheat meatballs as needed.
