  • 2 cups cooked chicken, shredded (Rotisserie chicken works great.)
  • 1 each cucumber, diced
  • 1 each bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Gather your ingredients—this includes the shredded chicken, diced cucumber, bell pepper, halved cherry tomatoes, sliced olives, and crumbled feta.
  2. Chop your cucumber and bell pepper into bite-sized pieces. Halve those vibrant cherry tomatoes and slice up the Kalamata olives.
  3. Combine the shredded chicken, diced cucumber, bell pepper, halved cherry tomatoes, sliced olives, and feta cheese in a large mixing bowl.
  4. Dress the salad with olive oil and lemon juice, seasoning with salt and pepper to taste.
  5. Toss the salad gently until everything is well combined.
  6. Garnish with fresh parsley and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. For vegan adaptation, skip chicken and feta, and use chickpeas.
