A vibrant and nutrient-packed bowl featuring succulent salmon, fluffy quinoa, and fresh vegetables, all tossed in a light lemon vinaigrette.

Ingredients

  • 2 salmon fillets
  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the quinoa by cooking it according to package instructions and setting aside.
  2. Season the salmon fillets with salt and pepper. Heat olive oil in a pan over medium heat and cook the salmon for about 4-5 minutes on each side, or until cooked through.
  3. Chop the vegetables and combine them in a large bowl with the cooked quinoa, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  4. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl and pour over the quinoa mixture, tossing to combine.
  5. Assemble your bowls by serving the quinoa salad topped with salmon fillets and garnished with fresh parsley.
