A bright and colorful salad that blends nutritious ingredients like quinoa, fresh vegetables, and tangy feta, perfect for warm days.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness. In a saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
  2. Prepare the vegetables by dicing the cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
  3. Combine the fluffy, cooked quinoa with the freshly chopped vegetables in a large mixing bowl. Add in the crumbled feta cheese and sliced olives.
  4. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
  5. Dress the salad by pouring the dressing over the quinoa salad and gently tossing everything to combine.
  6. Serve chilled or at room temperature and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
