A refreshing Mediterranean pasta salad filled with vibrant vegetables and feta cheese, perfect for summer.

Ingredients

  • 8 ounces of pasta (e.g., rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions. Once it reaches that perfect al dente texture, drain and rinse it with cold water.
  2. Combine the cooked pasta with the vibrant cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, crumbled feta cheese, and freshly chopped parsley in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta mixture and toss gently to combine.
  5. Serve your salad chilled or at room temperature, allowing the flavors to meld beautifully.
