A soul-satisfying dish featuring tender pasta coated in garlic, sun-dried tomatoes, olives, and feta cheese.

Ingredients

  • Pasta (Penne, Fusilli, or Gluten-Free)
  • Sun-Dried Tomatoes
  • Minced Garlic
  • Kalamata or Green Olives
  • Feta Cheese (Crumbled)
  • Extra Virgin Olive Oil
  • Salt
  • Black Pepper
  • Fresh Basil (Optional)

Instructions

  1. Boil the Pasta: Fill a large pot with water and add a pinch of salt. Bring to a boil and cook the pasta until al dente, about 8-10 minutes. Drain, reserving a cup of pasta water.
  2. Heat the Olive Oil: Pour 2-3 tablespoons of olive oil into a large skillet over medium heat.
  3. Sauté the Garlic: Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Mix in Sun-Dried Tomatoes and Olives: Stir in the sun-dried tomatoes and olives, cooking for 2-3 minutes.
  5. Combine Pasta and Feta: Add the drained pasta and feta cheese to the skillet, tossing gently to combine.
  6. Adjust Seasoning: Season with salt and black pepper, adding reserved pasta water if needed.
  7. Serve and Garnish: Drizzle with olive oil, add fresh basil if desired, and serve warm.

Customize by adding protein like chicken or shrimp, or toss in greens like spinach or arugula for extra nutrients.
