Delicious and nutritious Mediterranean Egg Bites packed with bell peppers, spinach, and feta cheese, perfect for breakfast or brunch.

Ingredients

  • 6 large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup crumbled feta cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk the eggs in a large mixing bowl until blended and light in color.
  3. Toss in the diced bell peppers, chopped spinach, and halved cherry tomatoes into the egg mixture.
  4. Sprinkle in the salt, black pepper, garlic powder, and oregano. Stir to combine.
  5. Gently fold in the crumbled feta cheese.
  6. Grease a muffin tin and pour the egg mixture into each muffin cup, filling them about 3/4 full.
  7. Place the muffin tin in the oven and bake for about 20-25 minutes, until set and lightly golden.
  8. Remove from the oven and allow to cool slightly before lifting out of the tin.

Notes

These egg bites can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
