A delightful and zesty Mandarin Orange Cake that is easy to make and perfect for any occasion.

Ingredients

  • 1 box of yellow cake mix
  • 1 can (11 oz) mandarin oranges, drained
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1 can (8 oz) whipped topping
  • 1 can (20 oz) mandarin oranges, drained and chopped
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine the yellow cake mix, eggs, vegetable oil, water, and the 11 oz can of mandarin oranges until well combined.
  3. Pour the batter into the prepared baking pan and bake for 30–35 minutes, checking for doneness with a toothpick.
  4. Cool the cake completely in the pan.
  5. Prepare the frosting by combining the whipped topping, chopped mandarin oranges, and powdered sugar in a separate bowl.
  6. Frost the cooled cake with the whipped topping mixture.
  7. Slice the cake into pieces and serve!

Notes

Store leftovers covered in the refrigerator for up to 3 days or freeze individual slices for up to 3 months.
