Delicate, colorful French macarons with a crisp exterior and chewy interior, perfect for any occasion.

Ingredients

  • 100g almond flour
  • 100g powdered sugar
  • 75g aged egg whites
  • 100g granulated sugar
  • Pinch of salt
  • Food coloring (optional)
  • Filling of your choice (buttercream, ganache, jam)

Instructions

  1. Preheat your oven to 140°C (285°F).
  2. Sift the almond flour and powdered sugar together in a bowl.
  3. Whip the aged egg whites along with a pinch of salt until foamy.
  4. Gradually add the granulated sugar while whisking until you achieve stiff peaks.
  5. Add a few drops of food coloring if desired and mix carefully.
  6. Fold the almond flour mixture into the meringue until well combined.
  7. Transfer the mixture into a piping bag and pipe small circles onto a baking sheet.
  8. Let them rest for 30-60 minutes until a skin forms on the surface.
  9. Bake for 15-20 minutes until firm on the outside yet soft inside.
  10. Cool completely before peeling off the parchment paper and fill them with your chosen filling.

Notes

Store macarons in an airtight container in the refrigerator for up to a week.
