  • 3 cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped

  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water to remove any debris. In a pot, combine lentils with 3 cups of water; bring to a boil. Reduce heat and simmer until tender, about 20-30 minutes. Drain and let cool.
  2. Combine the diced cucumber, red bell pepper, cherry tomatoes, and finely chopped red onion in a large bowl.
  3. Add the cooled lentils to the vegetable mixture, ensuring a hearty blend of colors and textures.
  4. Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl.
  5. Pour the dressing over the lentil salad and toss gently to combine. Garnish with fresh herbs and serve immediately.

Notes
