  • 1 cup ricotta cheese
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Zest and juice of 1 lemon
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the ricotta cheese and softened butter until smooth.
  3. Mix in the granulated sugar, vanilla extract, lemon zest, lemon juice, and large egg.
  4. Whisk together the flour, baking powder, and salt in a separate bowl, then gradually add it to the wet ingredients until just combined.
  5. Drop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each.
  6. Bake for 12-15 minutes, or until the edges are lightly golden.
  7. Allow the cookies to cool slightly on the baking sheet and dust with powdered sugar if desired before serving.

Notes

For added flavor, substitute half the ricotta with cream cheese or add poppy seeds for texture. Store in an airtight container for up to 5 days at room temperature or freeze for up to 3 months.
