Delightful lemon raspberry bars with a buttery crust and tangy filling, perfect for summer gatherings or a cozy night in.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×9 inch baking pan with parchment paper.
  2. In a bowl, mix together the all-purpose flour and powdered sugar. Cut in the softened butter until crumbly.
  3. Press this mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for about 15-20 minutes until lightly golden.
  5. While the crust is baking, whisk together the granulated sugar, eggs, fresh lemon juice, lemon zest, baking powder, and salt until well combined.
  6. Gently fold in the fresh raspberries.
  7. Pour the filling over the pre-baked crust and spread evenly. Bake for an additional 20-25 minutes or until the filling is set and slightly golden.
  8. Allow the bars to cool completely before lifting them out. Dust with powdered sugar before cutting into squares.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days.
