  • 2 teaspoons baking powder

  • 1/4 teaspoon salt
  • 1/4 cup poppy seeds
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups to ensure your muffins release easily.
  2. Whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and poppy seeds in a large bowl.
  3. Combine the melted butter, eggs, sour cream, fresh lemon juice, and lemon zest in another bowl.
  4. Pour the wet ingredients into the dry ingredients, stirring until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake in the preheated oven for about 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring to a wire rack.

Notes

For an extra burst of lemon flavor, swap in some lemon extract. Ensure ingredients are at room temperature for better emulsion.
