  • 1/2 cup unsalted butter, softened

  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup buttermilk
  • 1 tablespoon poppy seeds

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt.
  3. Cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Incorporate the lemon juice and zest into the batter.
  6. Combine the dry ingredients with the wet ingredients, alternating with the buttermilk.
  7. Fold in the poppy seeds.
  8. Pour the batter into the prepared loaf pan and smooth the top.
