A delightful lemon meringue pie featuring a tart lemon filling and a fluffy meringue topping, perfect for any occasion.

  • 1 pre-made pie crust
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 large egg yolks
  • 1/4 cup fresh lemon juice
  • 2 tablespoons butter
  • 1 teaspoon lemon zest
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, mix 1 cup sugar, cornstarch, and salt. Stir in the water gradually.
  3. Cook this mixture over medium heat, stirring constantly until it thickens and bubbles.
  4. In a separate bowl, beat the egg yolks. Stir in a small amount of the hot thickened mixture.
  5. Pour the tempered egg yolk mixture back into the saucepan and bring everything to a boil.
  6. Remove from heat and stir in the lemon juice, butter, and lemon zest until smooth.
  7. Carefully pour the lemon filling into the pre-made pie crust.
  8. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form.
  9. Add 1/2 cup sugar gradually, continue to beat until stiff peaks form.
  10. Spread the meringue over the lemon filling, ensuring it touches the edges of the crust.
  11. Place the pie in the oven and bake for 10-12 minutes until golden.
  12. Once baked, let the pie cool completely before slicing and serving.

Serve with a dollop of whipped cream or vanilla ice cream for an extra treat.
