A refreshing and creamy Lemon Icebox Pie that blends tart lemon with a sweet filling, perfect for warm weather gatherings.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until lightly browned and set.
  2. Mix together sweetened condensed milk, lemon juice, and lemon zest until well combined. Pour the filling into the cooled crust.
  3. Refrigerate the pie for at least 4 hours or until set. This allows the flavors to meld beautifully and creates the perfect texture.
  4. Whip the heavy cream and powdered sugar until soft peaks form. Spread or pipe this luscious cream over the chilled pie before serving, adding an elegant finish.
